Gamasutra's Ask the Experts column has a list of 31 Suggested Games that Students of Game Development Should Play. In the middle (because it's in alphabetical order) is:
multi-user dungeon (MUD) (any)
Yay!
I've only played 15 from the list myself, mind you...
